Philly Food Rescue invites our volunteers and the community to an Earth Day Sustainable Kitchen Cooking Class at Share Food Program’s Nice Roots Farm!

Let’s gather to celebrate Earth Day through mindful cooking practices that nourish both body and planet. Whether you’re a seasoned chef or new to the kitchen, this class will inspire you to make a positive impact through your cooking!

During this Sustainable Kitchen cooking class, Chef April from The People’s Kitchen of Philadelphia will teach the Philly Food Rescue community her favorite low-energy, low-waste cooking methods that celebrate the Earth’s bounty. Following her tenets of eco-friendly eating, we will learn to reduce both the money and food that we waste in our home kitchens by creating nutrient-dense and delicious plant-based meals.

Chef April will cover:

Root to Tip Fruit & Vegetable Fermentation: Discover the art of utilizing the whole fruit and/or vegetable through fermentation, minimizing waste and creating flavorful, probiotic-rich foods.

Low Energy Cooking: Create delicious meals without heating up your kitchen in the warm months of the year! Stay cool by making chopped salads, no-cook soups, and using fermentation to “cook” your vegetables.

Reducing Waste: Explore strategies for reducing food waste in your kitchen, including delicious and creative ways to use up scraps and leftovers.

Cooking with What You Have: Embrace the challenge of making do by shopping the shelf before you head to the market. Learn to make creative meals from pantry staples and odds and ends from your fridge or freezer.

Recycling Leftovers: Learn how to transform leftovers into new and exciting dishes, reducing food waste and saving money in the process.

Eating Locally: Consider the wisdom of eating seasonally from nearby farms, which not only reduces our carbon footprint, but grounds us in time, connects us to land and people, and gives our bodies exactly what we need.

We will sample an improvised chopped salad, using fermented vegetables plus whatever fresh ingredients Chef April finds in The People’s Kitchen and Philly Food Rescue fridges. This salad will serve as a guide for getting creative in your own kitchen. Then we will finish the class with a hands-on lesson making fermented, probiotic sodas from fruit peels and cores that would otherwise go to waste.
